Ingredient Notes

  • All-Purpose Flour - You can also use bread flour for this recipe if you want the buns to be slightly chewy.

  • Granulated Sugar - It acts like food for the yeast, increases its activity, and makes the dough tender.

  • Active Dry Yeast - You can also use instant yeast.

  • Milk - The liquid activates the yeast. Using milk makes the buns soft and fluffy, especially if you use whole milk.

  • Unsalted Butter - Let the butter sit at room temperature. It should be cold enough to hold its shape but not too cold.

  • Salt

  • Neutral Tasting Oil - To drizzle in the dough bowl and on the work surface.

Easy Instructions

  1. Activate the yeast. Mix the warm milk, sugar, and active dry yeast in the bowl of your stand mixer for about 30 seconds or until they start to get combined, not dissolved. Now let it rest for a few minutes.

  2. Add the salt and flour at once.

  3. Knead the dough. Knead the dough for 5-7 minutes.

  4. Add butter. Add 2-3 pieces of butter and continue kneading until there are no visible chunks. Continue kneading for another 7-8 minutes.

  5. Rest and rise the dough. Once the dough is elastic. Transfer the dough into an oiled bowl and cover it with plastic wrap. Let it rest for 60 minutes.

  6. Shape the buns. Divide the dough into 6 equal pieces and shape them into buns. Let them rest and rise for another 45 minutes.

  7. Bake the buns. Bake them at 190°C (374°F) for 18-20 minutes.

  8. Finish them off. Generously brush butter on them and let them rest for 10-15 minutes.

Expert Tips and Tricks

  • Use warm milk. Heat the milk in the microwave for a few seconds. Warm milk helps activate the yeast faster.

  • If you dont have a stand mixer. If you do not own a stand mixer, you can do this in a large mixing bowl with a large wooden spoon/rubber spatula. It will take a bit of arm strength to do it. A hand mixer works too, but the sticky dough constantly gets stuck in the hook attachment. So, mixing by hand using a wooden spoon/rubber spatula is a better choice.

  • Place the buns 2-3 inches apart. Since they’ll significantly rise and puff up in size.

  • Add toppings. Feel free to add toppings like sesame seeds, nigella seeds, etc. before letting them rise.

  • Get the perfect golden-colored buns. If you notice the bun tops browning too quickly while baking, loosely cover them with aluminum foil and continue baking.
