Peanut Butter Pesto

This Peanut Butter Pesto is my take on the classic Pesto. Usually, Pesto is primarily made using basil and pine nuts. However, I find the combination of basil and fresh peanut butter as good as the original combo. I recently posted the recipe for Homemade Peanut Butter that takes only 3 minutes to make. That got me thinking about how much I love making Peanut Butter Pesto and should share it with all my readers. This Peanut Butter Pesto requires just 5 minutes to make and 5 ingredients (two of which are salt and pepper!). This recipe helps you make the perfect pasta sauce, dips, sandwich spreads, etc...

This homemade peanut butter pesto is quick and versatile and just yummm. And, as a bonus, this from-scratch pesto is way easier than you think and tastes fresh and many times tastier than store-bought pesto. And peanut butter is way easier to source than pine nuts that are used in the classic basil pesto.
This homemade pesto is my favorite. It’s simple, flavourful, and completely fresh. You’ll be surprised how easily it comes together and that it tastes much more complex than the actual process. Peanut Butter Pesto can be a dressing, dip, sauce, or spread and pairs wonderfully with so many flavors. And it simply elevates any dish you make.

What ingredients will you need?
This peanut butter pesto is simplicity itself. As always the ingredients are simple and easy to procure:
Fresh Basil leaves
Garlic cloves
salt and pepper
any oil of your choice (olive oil, peanut oil, sesame oil, etc...)
peanut butter (recipe is posted on my blog or simply use store-bought)

Ingredients are common and simple

This recipe is not really a recipe. There isn't any real process to it. Simply put all the ingredients in a grinder and blitz it. Process it till you are satisfied with the consistency. Then taste it. Check if it is seasoned according to your taste. And Voila!
If you can't find any fresh basil, you can use mint instead. If you want to make it spicy add some green chilli or black pepper powder. There is no right or wrong. It's just that easy to customize it according to your preferences.
Since all you have to do is blend everything together, it’s easy to taste-test as you go. I’d advise you to add things slowly – you can always add more of everything, but can’t remove the ingredient once it’s in there.

Ingredients
1 cup basil leaves
1 tsp salt
1 tsp pepper
4 tbsp oil (peanut, sesame, vegetable)
3 cloves of garlic
5 tbsp peanut butter
Instructions
Pluck all the basil leaves from the stems.
Then, put the basil leaves, salt, pepper, oil, peanut butter, and garlic cloves in a grinder.
Blitz them until it reaches the desired texture and consistency.
Make sure to taste it as you go.
Tip: To keep the pesto from turning brown and dark. Simply transfer the pesto into a jar and add oil on top (about 1 cm high).
Storage instructions: The peanut butter pesto keeps well in a closed container in the fridge for 5-6 days.
